Carne Asada Marinade

    Prepare the marinade

    In a large bowl, whisk together lime juice, orange juice, olive oil, minced garlic, cumin, chili powder, paprika, salt, and pepper. Stir in 1/4 cup chopped cilantro.

    Marinate the steak

    Pat steak dry and place it in a resealable bag or shallow dish. Pour marinade over, seal, and refrigerate for at least 2 hours (or up to 8–12 hours for deeper flavor).

Rice

    Cook the rice

    Rinse rice until the water runs clear. In a saucepan, combine rice, water, salt, and butter. Bring to a boil, then reduce heat to low, cover, and simmer 18 minutes. Remove from heat and rest 5 minutes.

Beans

    Season and heat beans

    In a skillet, heat olive oil over medium. Sauté onion and garlic until translucent. Add cooked beans and cumin; mash slightly if desired and simmer 5–8 minutes. Adjust salt to taste.

Guacamole

    Make guacamole

    Halve the avocados, remove pits, and scoop into a bowl. Mash to desired texture. Stir in lime juice, red onion, jalapeño, cilantro, salt, and tomato if using. Taste and adjust seasoning.

Jalapeño Bacon Bites

    Prepare bites

    Slice jalapeños in half lengthwise and remove seeds. Mix cream cheese with garlic powder, paprika, and a pinch of salt. Fill each jalapeño half with cream cheese.

    Wrap with bacon

    Wrap each stuffed jalapeño with a slice of bacon and secure with a toothpick. Optionally drizzle with brown sugar for glaze.

    Bake

    Place on a baking sheet and bake at 400F (200C) for 18–20 minutes, until bacon is crispy and cheese is melted.

Carne Asada Grill & Plate

    Grill the carne asada

    Preheat grill to high. Remove steak from marinade and pat dry. Grill 4–6 minutes per side for medium-rare, or longer if desired. Let rest 5–10 minutes, then slice thinly against the grain.

    Plate and serve

    Spoon rice and beans on plates, top with sliced carne, add a dollop of guacamole, and arrange jalapeño bacon bites on the side. Garnish with cilantro if desired.
