Make the dough base
In a medium saucepan, combine water, unsalted butter, salt and granulated sugar. Bring to a boil over medium heat.

Incorporate flour
Remove from heat and add the all-purpose flour all at once, stirring quickly until the dough pulls away from the sides and forms a ball.

Add eggs
Let dough cool for 5 minutes, then beat in eggs, one at a time, until the mixture is smooth and glossy.
Frying and Coating

Fry churros
Heat oil in a deep fryer or heavy pot to 375°F (190°C). Pipe the dough into long strips and fry until golden brown and crisp, about 2-3 minutes per batch.

Coat with cinnamon sugar
Drain churros on paper towels, then roll warm churros in a mixture of granulated sugar and ground cinnamon to coat.
