Tapioca pearls

    Cook pearls

    In a large pot, bring 4 cups of water to a rolling boil. Add the dried tapioca pearls and reduce to a simmer. Cook 20 minutes, stirring occasionally, until pearls become translucent and tender.

    Cool and rinse

    Remove from heat and cover. Let stand 5 minutes, then drain and rinse pearls under cold water to stop cooking.

    Coat with syrup

    Toss warm pearls with 2 tablespoons of simple syrup to lightly sweeten and prevent sticking. Set aside.

Beverage base (Thai tea)

    Brew Thai tea

    In a separate pot, bring 1 cup of water to a boil. Add 2 tablespoons Thai tea mix and remove from heat after 5–7 minutes of steeping. Strain to remove leaves and allow the tea concentrate to cool.

Assembly

    Assemble drink

    In a tall glass, add 1 cup of ice.

    Add tea and milk

    Pour the cooled Thai tea concentrate over the ice until the glass is about 2/3 full. Add 180 ml of milk and stir to combine.

    Add pearls and serve

    Top with the sweetened tapioca pearls. Stir gently and serve with a wide straw.
