    Prepare berry compote

    In a small saucepan, combine mixed berries, sugar, lemon juice, and water. Bring to a gentle simmer over medium heat, stirring occasionally. Cook until the berries have broken down and the mixture thickens into a glossy compote, about 8–12 minutes. Remove from heat and let cool slightly (it can be served warm or at room temperature).

    Set up for assembly

    If you prefer, lightly toast the granola for extra crunch and set aside. Have yogurt portioned into two glasses or short tumblers ready for layering.

    Layer the parfait

    In each serving glass, add a layer of Greek yogurt (about 1/2 cup per glass), followed by a layer of granola (about 1/2 cup per glass). Repeat with another layer of yogurt and granola, leaving room for the berry compote on top.

    Add berry compote and honey

    Spoon a generous layer of berry compote over the yogurt and granola layers in each glass. Drizzle honey over the top to taste (about 1–1.5 tablespoons per glass).

    Finish and serve

    Optionally garnish with a few fresh berries or a light mint leaf. Serve immediately to enjoy the contrast of crunchy granola with creamy yogurt and luscious berry compote.
