Method

Appetizers

  1. 1

    Marinate beef

Thinly slice the beef against the grain. In a bowl, whisk together 2 Tbsp lime juice, 2 Tbsp fish sauce, 1 tsp sugar, and 4 cloves minced garlic with 1 Tbsp olive oil. Add the beef slices and toss to coat. Let marinate for 15-20 minutes.

  2. 2

    Prepare vegetables and basil

Wash and chop lettuce into bite-sized pieces. Slice tomatoes and cucumber. Thinly slice red onion. Tear basil leaves into rough pieces.

  3. 3

    Cook beef

Heat a skillet or grill pan over high heat. Remove beef from marinade and pat dry. Sear the beef for 1-2 minutes per side until browned and medium-rare. Transfer to a plate and rest 5 minutes.

  4. 4

    Make dressing

In a small bowl, whisk together remaining 2 Tbsp lime juice, 2 Tbsp fish sauce, 1 tsp sugar, and 2 minced garlic cloves with 1 Tbsp olive oil. Finely chop an extra half chili if you want more heat. Season with salt and freshly ground black pepper to taste.

  5. 5

    Assemble salad

In a large bowl, combine lettuce, tomatoes, cucumber, red onion, and torn basil. Drizzle dressing over the greens and toss gently to coat.

  6. 6

    Finish and serve

Slice rested beef thinly and arrange over the salad. Garnish with extra basil if desired and serve immediately with lime wedges on the side.
