Prepare ribs
Pat ribs dry with paper towels. Remove the thin membrane from the bone side to help the rub penetrate. Set ribs on a rack over a sheet pan.

Make dry rub
In a small bowl, combine kosher salt, black pepper, garlic powder, onion powder, smoked paprika, brown sugar, and cayenne pepper.

Apply rub and marinate
Pat the rub evenly over both sides of the ribs. Gently press to adhere. Wrap tightly and refrigerate for 60 minutes to let flavors penetrate.

Make BBQ sauce glaze
In a medium saucepan, whisk together ketchup, apple cider vinegar, brown sugar (for sauce), molasses, Worcestershire sauce, soy sauce, yellow mustard, minced garlic, smoked paprika, and chipotle powder. Bring to a simmer over medium heat and cook 8–12 minutes, stirring occasionally, until slightly thickened. If too thick, add water a little at a time to reach desired consistency. Remove from heat.

Preheat and prepare for baking
Preheat oven to 275°F (135°C). Line a large sheet pan with aluminum foil and place a wire rack on top. Remove ribs from fridge and let come to room temp for 15 minutes.

Bake low and slow
Place ribs bone-side down on the rack. Bake for about 2 hours, until meat is tender but not falling apart. Brush with glaze every 30 minutes during the last hour to build caramelization.

Finish with glaze and rest
Remove ribs from oven. Brush with a final layer of glaze and broil for 4–6 minutes to caramelize (watch closely to avoid burning). Let rest 10 minutes, then slice between bones and serve with additional sauce.
