Method

Appetizers

  1. 1

    Prepare the marinade

In a large bowl, whisk together olive oil, soy sauce, brown sugar, smoked paprika, garlic powder, onion powder, ground cumin, chili powder, dried oregano, salt, and black pepper until well combined.

  2. 2

    Trim and ready the chicken

Pat the chicken halves dry with paper towels. Place them in a large resealable bag or shallow dish.

  3. 3

    Marinate

Pour the marinade over the chicken, turning to coat evenly. Seal the bag (remove excess air) or cover the dish. Refrigerate for at least 2 hours, preferably 4-6 hours, turning occasionally.

  4. 4

    Preheat grill

Preheat grill to medium-high heat (about 375-400°F / 190-205°C). Oil the grates to prevent sticking.

  5. 5

    Grill the chicken

Remove chicken from marinade, letting excess drip off. Place skin-side down on the grill. Grill for 12-15 minutes, flipping once, until the internal temperature reaches 165°F (74°C) and the skin is crispy.

  6. 6

    Glaze

Brush with BBQ sauce during the last 5-7 minutes of cooking, turning occasionally to glaze evenly and caramelize.

  7. 7

    Rest and serve

Transfer to a cutting board and let rest for 5 minutes before slicing. Serve as an appetizer with additional BBQ sauce on the side.
