Method

Brunch Entrees

  1. 1

    Batter and bread prep

In a shallow dish, whisk together eggs, milk, vanilla extract, 1 teaspoon cinnamon, nutmeg, and salt. Dip each slice of bread into the batter for 20-30 seconds per side, allowing it to soak but not become mushy. Set the battered slices aside on a rack or plate as you finish dipping.

  2. 2

    Caramelize the apples

Peel, core, and thinly slice the apples. In a large skillet, melt 2 tablespoons unsalted butter over medium heat. Add apples, lemon juice, brown sugar, and 1/2 teaspoon cinnamon. Cook, stirring occasionally, until apples are tender and caramelized, about 6-8 minutes. Remove from heat and keep warm.

  3. 3

    Cook the French toast

Wipe the skillet and add a little more butter if needed. Cook the soaked bread slices in batches over medium heat, about 2-3 minutes per side, until golden brown and cooked through. Keep finished slices warm in a low oven if needed.

  4. 4

    Finish and serve

To serve, stack French toast slices on plates. Top with caramelized apples, dust with powdered sugar, and dollop whipped cream. Drizzle with maple syrup and serve immediately.
