Specials

  1. 1

    Prepare rub

In a small bowl, combine kosher salt, ground black pepper, paprika, garlic powder, onion powder, brown sugar, and ground cumin to create the beef rub.

  2. 2

    Season and rest beef

Pat the boneless beef chuck roast dry. Rub all surfaces evenly with the prepared rub. Let rest 10-15 minutes to let flavors adhere.

  3. 3

    Sear the roast

Heat olive oil in a heavy skillet over medium-high heat. Sear the roast on all sides until deeply browned, about 3-4 minutes per side. Transfer to slow cooker.

  4. 4

    Slow-cook the beef

Pour beef broth into the slow cooker. Place the seared roast in the broth. Cook on low for 8-10 hours, or until the meat is fork-tender and shreds easily.

  5. 5

    Make Alabama White Sauce

In a bowl, whisk together mayonnaise, apple cider vinegar, lemon juice, prepared horseradish, Dijon mustard, granulated sugar, salt, black pepper, and white pepper until smooth. Chill to let flavors meld while beef finishes.

  6. 6

    Shred and sauce the beef

Remove the beef from the slow cooker and shred it with two forks. Return the shredded beef to the pot and fold in 1 cup of the Alabama White Sauce, tasting and adding more sauce if needed.

  7. 7

    Toast buns

Slice brioche buns in half. Butter the cut sides and toast in a skillet or on a griddle until golden and lightly crisp.

  8. 8

    Assemble the sandwiches

Pile a generous portion of the saucy beef onto each bun. Top with shredded lettuce and dill pickle slices. Drizzle additional Alabama White Sauce over the beef if desired. Cap with the top bun.

  9. 9

    Serve

Serve hot with extra Alabama White Sauce on the side for dipping.
