    Prep and season

    Choose the protein (chicken, beef, shrimp, or firm tofu) and cut into bite-sized pieces if needed. Pat dry. Season evenly with a pinch of salt and pepper. Rinse and prep the vegetables: baby corn halved, mushrooms sliced, snow peas trimmed, and onions sliced thin. Mince garlic. Have all ingredients measured and ready to go.

    Sear protein

    Heat 1 tablespoon of butter in a large skillet or wok over medium-high heat. Add the protein and sear until well browned on all sides and just cooked through. Remove to a plate and set aside.

    Sauté aromatics

    In the same pan, add the remaining tablespoon of butter. Add minced garlic and sliced onions and sauté for 1-2 minutes until fragrant and translucent.

    Cook vegetables

    Add mushrooms, baby corn, and snow peas to the pan. Stir-fry for 3-4 minutes until the vegetables are crisp-tender. Season lightly with a pinch of salt.

    Make roux and sauce

    Sprinkle flour over the vegetables and stir for about 1 minute to cook the raw flour taste. Slowly whisk in chicken stock, scraping up any browned bits. Bring to a simmer, then stir in heavy cream. Let the sauce thicken, about 2-3 minutes. Season with salt and pepper to taste.

    Combine and finish

    Return the protein to the pan and toss to coat with the sauce. Simmer for 1-2 minutes until everything is heated through. Stir in chopped parsley. Adjust seasoning with more salt and pepper if needed.

    Serve

    Serve Ala Royal hot over steamed rice or noodles. Garnish with extra parsley if desired.
