Method
Overview and Base Preparation
- 1
Prepare Agua Fresca Base
In a large pitcher, combine 8 cups cold water, 3/4 cup granulated sugar, 1/2 cup fresh lime juice, and 1/2 teaspoon salt. Stir until the sugar is completely dissolved. Refrigerate the base for at least 15 minutes to chill.
Flavor Preparations
- 2
Jamaica Hibiscus Infusion
In a saucepan, bring 4 cups water to a boil. Add 1 cup dried hibiscus petals and remove from heat. Let steep for 10 minutes. Strain through a fine-mesh sieve into a clean container. While warm, dissolve 2 tablespoons sugar. Chill the hibiscus infusion before using.
- 3
- 4
Mango Puree
Place 2 cups peeled, chopped mango flesh in a blender. Blend until smooth. If desired, puree can be strained to remove fibrous bits. Chill.
- 5
Cucumber Purée
Blend 2 cups peeled, chopped cucumber with 1/2 cup cold water until smooth. Strain through a fine sieve to remove any solids for a smoother beverage. Chill.
- 6
Pineapple Purée
Blend 2 cups fresh pineapple chunks until smooth. Strain if you prefer a smoother texture. Chill.
Combine and Serve
- 7
Combine Base with Flavor
To assemble, fill a glass with ice. Add equal parts of the cooled agua fresca base and your chosen flavor infusion or fruit puree (adjust to taste). For example, 1 cup base + 1 cup flavor per serving, then top with a splash of cold water or sparkling water if you prefer a lighter drink.
- 8
Sweeten and Adjust
Taste the beverage and add a touch more sugar if desired (in 1 teaspoon increments) or a squeeze of lime for brightness. Stir well.
- 9
Garnish and Serve
Serve over ice with optional garnishes such as lime wheels, cucumber ribbons, or pineapple chunks. Best when fresh.
