Batter & Base

Method

Batter & Base

  1. 1

    Make custard

In a wide, shallow dish whisk together 3 large eggs, 1 cup whole milk, 1 tsp vanilla extract, 1 tsp ground cinnamon and a pinch of salt until smooth and slightly frothy. This is your French toast custard.

  2. 2

    Prepare bread

Spread 1/2 tablespoon peanut butter on one side of 4 bread slices and 1/2 tablespoon Nutella on one side of the other 4 slices so you have peanut butter and Nutella on facing sides for sandwich-style French toast. (If you prefer individual-topped slices instead of sandwiches, spread on top after cooking.)

  3. 3

    Assemble sandwiches (optional)

Place peanut-buttered slices face-up, sprinkle a few chocolate chips, chopped walnuts/pecans and a couple of chopped Oreos on each, then top with Nutella-smeared slices to form 4 sandwiches. Press gently so fillings adhere.

  4. 4

    Soak

Heat a large nonstick skillet or griddle over medium heat and add 1 tablespoon butter to coat. Working 2 sandwiches (or 4 single slices) at a time, dip each sandwich briefly into the custard—about 5–8 seconds per side for thick bread—so the bread soaks but doesn't fall apart. Let excess drip back into the dish.

  5. 5

    Cook

Add remaining 1 tablespoon butter to the skillet as needed. Place soaked sandwiches or slices in the skillet and cook 3–4 minutes per side until golden brown and cooked through and fillings are warmed. If using single slices topped later, cook until golden then spread fillings on warm toast.

Spreads & Mix-ins

  1. 6

If you made sandwiches, the fillings will warm during cooking. If assembling individual slices, gently warm peanut butter and Nutella (10–15 seconds in microwave) so they spread easily. Sprinkle chocolate chips, chopped nuts and chopped Oreos on top of the warm French toast so chips soften slightly and nuts release aroma.

Fruit & Toppings

  1. 7

Top each cooked sandwich or slice with sliced bananas, strawberries and a scattering of blueberries. Drizzle with maple syrup to taste. Dust with powdered sugar if desired. Serve immediately while warm so the spreads are gooey and the fruit is fresh.
