Whisk eggs

Crack the 4 large eggs into a medium bowl. Add 2 tablespoons whole milk, 1 teaspoon kosher salt, and 1 teaspoon freshly ground black pepper. Whisk vigorously until the mixture is uniform, slightly frothy and pale—about 20–30 seconds.

Set the egg mixture aside while you prepare the other components so everything is ready when the pan is hot.

Combine cheeses

In a separate small bowl, stir together 1 cup grated sharp cheddar, 1 cup shredded mozzarella, 2 tablespoons softened cream cheese, and 2 tablespoons grated parmesan until evenly mixed. If you prefer extra creaminess, mash the cream cheese into the mixture so there are no large lumps.

Taste a small pinch of the cheese mixture (optional) to check seasoning; the cheddar and parmesan contribute salt, so adjust the egg salt if you prefer.

Sauté shallot

Heat a nonstick 10-inch skillet over medium heat. Add 2 tablespoons unsalted butter and swirl to coat. Add the finely chopped small shallot and sauté until soft and translucent, about 1–2 minutes. Avoid browning the shallot strongly; you want a mild sweet flavor.

Stir in 2 tablespoons snipped fresh chives and 1 teaspoon smoked paprika (if using), cook 10 seconds to bloom the paprika, then remove the pan from heat and wipe excess butter onto the rim with a spatula so it’s ready for the eggs.

Preheat pan

Reduce heat to medium-low. Make sure the shallot and butter cover is evenly distributed in the pan so the eggs set evenly.

Pour eggs and set edges

Give the egg mixture a quick re-whisk, then pour into the warmed skillet. Let the eggs sit undisturbed for 10–15 seconds so the edges begin to set.

Stir and level

Using a heatproof rubber spatula, gently pull the cooked edges toward the center while tilting the pan to let uncooked egg flow to the edges. Repeat a few times until the top is mostly set but still slightly glossy—about 30–45 seconds total.

Add cheese

Reduce heat to low. Sprinkle the prepared cheese mixture evenly over one half of the omelet. Spoon any residual butter-and-shallot from the pan over the cheese for added flavor.

Finish cooking

Cover the skillet with a lid for 30–45 seconds to help melt the cheese and finish setting the eggs without over-browning. Check: the cheese should be melty and the eggs set but still tender.

Fold & rest

Use your spatula to fold the omelet in half, covering the cheese side. Slide the omelet onto a plate, seam-side down. Let it rest 1 minute so residual heat completes melting and the omelet settles.

To serve (optional)

Serve the omelet with 6 halved cherry tomatoes and 2 cups mixed baby greens dressed simply with a drizzle of olive oil and pinch of salt, or serve with 2 teaspoons hot sauce or ketchup on the side. Garnish the omelet with extra snipped chives if desired.
