Boil the Noodles
Bring a large pot of salted water to a boil. Add the lasagna noodles and cook according to package instructions until al dente. Drain and set aside.

Prepare the Tomato Sauce
In the same skillet, add crushed tomatoes, oregano, basil, salt, and pepper. Bring to a simmer and cook for about 10 minutes to allow flavors to meld.

Layer the Lasagna
Preheat the oven to 375°F (190°C). In a 9x13 inch baking dish, spread a thin layer of tomato sauce on the bottom. Place three lasagna noodles over the sauce. Spread half of the vegetable mixture over the noodles, followed by one-third of the ricotta cheese and one-third of the mozzarella cheese. Repeat the layers, ending with a final layer of noodles topped with remaining tomato sauce and mozzarella cheese. Sprinkle Parmesan cheese on top.

Bake the Lasagna
Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.

Cool and Serve
Let the lasagna cool for about 10 minutes before slicing. Serve warm.
