Vegetable Curry

Add Garlic and Ginger
Stir in the minced garlic and grated ginger, cooking for an additional 1-2 minutes until fragrant.

Cook Vegetables
Add the diced carrot, bell pepper, zucchini, and cauliflower florets. Cook for about 5-7 minutes, stirring occasionally.

Add Liquids and Seasoning
Pour in the coconut milk and vegetable broth. Stir in the curry powder, salt, and black pepper. Bring to a gentle simmer.

Simmer
Reduce the heat to low and let the curry simmer for 15-20 minutes, or until the vegetables are tender.

Stir in the chopped cilantro just before serving.

Rinse Rice
Rinse the basmati rice under cold water until the water runs clear to remove excess starch.

Cook Rice
In a saucepan, combine the rinsed rice, water, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed.

Fluff Rice
Remove from heat and let it sit covered for 5 minutes. Fluff with a fork before serving.

Prepare Dough
In a small bowl, combine warm water, yeast, and sugar. Let sit for 5 minutes until frothy. In a large bowl, mix the flour, salt, yogurt, and olive oil. Add the yeast mixture and knead until smooth.

Let Rise
Cover the dough with a damp cloth and let it rise in a warm place for about 1 hour or until doubled in size.

Shape Naan
Punch down the risen dough and divide it into 6 equal portions. Roll each portion into a ball and then flatten it into an oval shape.

Heat a skillet over medium-high heat. Cook each naan for about 2-3 minutes on each side until golden brown and puffed.
