    Chop the Vegetables

    Dice the onion, carrots, celery, and potatoes into small pieces. Mince the garlic. Set aside.

    Prepare the Broth

    In a large pot, heat the olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté for about 5 minutes until the vegetables begin to soften.

    Add Garlic

    Stir in the minced garlic and cook for an additional minute until fragrant.

    Combine Ingredients

    Add the diced potatoes, vegetable broth, and water to the pot. Stir to combine.

    Season the Soup

    Add salt, black pepper, thyme, and bay leaves to the pot. Bring to a boil.

    Simmer

    Reduce the heat to low and let the soup simmer for 20-25 minutes, or until the potatoes are tender.

    Add Spinach

    Stir in the spinach and cook for another 5 minutes until wilted.

Serving

    Remove the bay leaves from the soup. Ladle the soup into bowls and serve hot with slices of crusty bread.
