Method

Prepare the Shrimp

    Mix Dry Ingredients

    In a large mixing bowl, combine the flour, cornmeal, salt, black pepper, and cayenne pepper.

    Prepare Eggs

    In another bowl, beat the eggs until well mixed.

    Coat Shrimp

    Dip each shrimp first into the egg mixture, then coat with the flour mixture. Ensure they are well coated.

Fry the Shrimp

    Heat Oil

    Heat oil in a large skillet over medium-high heat until hot (about 350°F or 175°C).

    Fry Shrimp

    Carefully place the breaded shrimp in the hot oil and fry for about 2-3 minutes on each side or until golden brown.

    Drain Shrimp

    Remove shrimp from the oil and place on paper towels to drain excess oil.

Make the Cajun Sauce

    Mix Sauce

    In a small bowl, mix the mayonnaise, hot sauce, and Cajun seasoning together until well combined.

Assemble the Sandwich

    Prepare Buns

    Slice the hoagie buns in half lengthwise.

    Add Sauce

    Spread a generous amount of Cajun sauce on the inside of each bun.

    Add Vegetables

    Layer shredded lettuce and tomato slices on the bun.

    Add Shrimp

    Top with a handful of fried shrimp.

    Serve

    Close the sandwich and serve immediately.
