Method

Prepare the Batter

  1. 1

    Mix the Dry Ingredients

In a medium bowl, combine 1 cup of all-purpose flour, 1 cup of cornstarch, 1 tsp baking powder, 1 tsp salt, and 1 tsp black pepper. Whisk until evenly mixed.

  2. 2

    Add the Wet Ingredients

Slowly pour in 1 cup of beer and 1 cup of ice water into the dry mixture. Stir gently until just combined. The batter should be slightly lumpy; do not overmix.

  3. 3

    Chill the Batter

Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the batter to thicken.

Prepare the Onion Rings

  1. 4

    Slice the Onions

Peel the large onions and slice them into 1/2-inch thick rings. Gently separate the rings and place them in a bowl.

  2. 5

    Heat the Oil

In a large, deep skillet or fryer, pour in 4 cups of vegetable oil. Heat the oil over medium-high heat until it reaches 350°F (175°C).

  3. 6

    Coat the Onion Rings

Take a few onion rings at a time and dip them into the chilled batter, ensuring they are evenly coated.

  4. 7

    Fry the Onion Rings

Carefully place the battered onion rings into the hot oil. Fry them in batches for about 2-3 minutes or until golden brown and crispy. Use a slotted spoon to remove them and place them on a paper towel-lined plate to drain any excess oil.

  5. 8

    Serve

Serve the hot onion rings immediately, optionally with dipping sauces like ranch or ketchup.
