Honey Butter
Method
Fritters
- 1
Prepare the Batter
In a large mixing bowl, combine the all-purpose flour, cornmeal, baking powder, salt, and sugar. Mix well to ensure that the dry ingredients are evenly distributed.
- 2
- 3
Combine Ingredients
Pour the wet mixture into the dry ingredients and stir until just combined. Fold in the fresh corn kernels gently to avoid overmixing.
- 4
Heat Oil
In a deep frying pan or skillet, heat the vegetable oil over medium heat until it reaches 350°F (175°C). You can test if the oil is ready by dropping a small amount of batter into it; it should sizzle immediately.
- 5
Fry Fritters
Using a tablespoon or small ice cream scoop, drop spoonfuls of the batter into the hot oil, being careful not to overcrowd the pan. Fry the fritters for about 3-4 minutes on each side, or until golden brown.
- 6
Drain and Keep Warm
Once cooked, remove the fritters from the oil and place them on a paper towel-lined plate to drain excess oil. Keep warm while you fry the remaining batter.
Honey Butter
- 7
Prepare Honey Butter
In a mixing bowl, beat the unsalted butter until creamy. Add the honey and mix until well combined and fluffy.
- 8
Serve
Transfer the honey butter to a serving dish and serve alongside the warm fritters.
