    Prepare the Ingredients

    Gather all the ingredients including the German bologna, pepper jack cheese, Texas toast, butter, black pepper, and mustard.

    Fry the German Bologna

    In a large skillet, melt 1 tablespoon of butter over medium heat. Once hot, add the German bologna slices and cook for about 2-3 minutes on each side until browned and slightly crispy.

    Melt the Cheese

    Once the bologna is cooked, place a slice of pepper jack cheese on top of each slice of bologna. Cover the skillet and let the cheese melt for about 1-2 minutes.

    Toast the Texas Toast

    In a separate pan, melt the remaining tablespoon of butter over medium heat. Add the Texas toast slices and toast them until golden brown on both sides, about 2-3 minutes per side.

    Assemble the Sandwiches

    Spread mustard on one side of each slice of Texas toast. Place the bologna with melted cheese on top of one slice and top with another slice of Texas toast, mustard side down.

    Cut the sandwiches in half and serve warm, adding black pepper to taste if desired.
