Fry the German Bologna
In a large skillet, melt 1 tablespoon of butter over medium heat. Once hot, add the German bologna slices and cook for about 2-3 minutes on each side until browned and slightly crispy.

Melt the Cheese
Once the bologna is cooked, place a slice of pepper jack cheese on top of each slice of bologna. Cover the skillet and let the cheese melt for about 1-2 minutes.

Toast the Texas Toast
In a separate pan, melt the remaining tablespoon of butter over medium heat. Add the Texas toast slices and toast them until golden brown on both sides, about 2-3 minutes per side.

Cut the sandwiches in half and serve warm, adding black pepper to taste if desired.
