Cut the Potatoes
Cut the washed and peeled potatoes into even strips, about 1/4 inch thick. Consistency in size will ensure even cooking.

In a large, heavy pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a deep-fry thermometer to check the temperature for accuracy.

After soaking, drain the water from the potatoes and pat them dry using paper towels to remove excess moisture.
