Preparation of Fish

    Prepare the batter

    In a large bowl, whisk together the all-purpose flour, cornstarch, baking powder, and salt. Gradually add the cold sparkling water while whisking until the batter is smooth and slightly thick.

    Heat the oil

    In a deep pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Batter the cod

    Dip each cod fillet into the batter, ensuring it is well coated.

    Fry the fish

    Carefully place the battered cod fillets into the hot oil. Fry for about 4-5 minutes on each side until golden brown. Remove and drain on paper towels.

    Prepare the potatoes

    Peel the russet potatoes and cut them into thick strips to create chips.

    Soak the potatoes

    Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch.

    Dry and fry the chips

    Drain the soaked potatoes, pat them dry with paper towels, and heat the vegetable oil in a separate pot over medium-high heat. Fry the chips in batches for about 5-7 minutes until golden and crispy. Remove and drain on paper towels, then season with salt to taste.

    Mix the tartar sauce

    In a small bowl, combine mayonnaise, chopped dill pickles, capers, lemon juice, and chopped fresh dill. Mix well and refrigerate until ready to serve.
