Prepare the Chips

Slice the Potatoes
Wash and peel the potatoes. Slice them thinly using a mandolin or a sharp knife, aiming for even thickness to ensure they cook uniformly.

Preheat the Oven
Preheat your oven to 400°F (200°C).

Dry the Potato Slices
After soaking, drain the potatoes and lay them out on a clean kitchen towel. Pat them dry thoroughly.

Season the Potatoes
In a large bowl, toss the dried potato slices with olive oil, salt, paprika, garlic powder, and black pepper until they are evenly coated.

Bake the Chips
Spread the seasoned potato slices in a single layer on a baking sheet lined with parchment paper. Bake for 20-25 minutes, flipping halfway through, until they are golden and crispy.

Cool the Chips
Remove the chips from the oven and let them cool for a few minutes on the baking sheet before transferring them to a serving bowl.

Toast the Hoagie Buns
While the chips are baking, slice the hoagie buns open without cutting all the way through. Place them on a baking sheet and toast in the oven for about 5-7 minutes until they are lightly golden.
