For the Chicken Fried Steak

Method

Preparing the Chicken Fried Steak

  1. 1

    Prepare the Breading Station

In a shallow bowl, whisk together the eggs and milk until well combined. In another shallow bowl, combine the flour, salt, black pepper, garlic powder, and onion powder.

  2. 2

    Coat the Steak

Take each cube steak and dip it into the egg and milk mixture, allowing excess to drip off. Then, dredge the steak in the flour mixture, pressing lightly to ensure it adheres. Set aside on a plate.

  3. 3

    Heat the Oil

In a large skillet, heat the vegetable oil over medium-high heat until it shimmers. Make sure you have enough oil to cover the bottom of the skillet.

  4. 4

    Fry the Steak

Carefully add the coated cube steaks to the hot oil. Fry for about 4-5 minutes per side, or until golden brown and cooked through. Remove from the skillet and place on paper towels to drain excess oil.

Making the Gravy

  1. 5

    Create a Roux

In the same skillet used to fry the steaks, reduce the heat to medium. Add 1 cup of flour to the remaining oil in the skillet, stirring constantly for about 2-3 minutes until the mixture is golden brown.

  2. 6

    Add Milk and Seasonings

Slowly whisk in the milk, keeping the mixture smooth. Add salt, black pepper, garlic powder, and onion powder. Continue to stir until the gravy thickens, about 5-7 minutes.

  3. 7

    Serve

Pour the gravy over the fried steaks and serve hot.
