Cake Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.

  2. 2

    Mix Dry Ingredients

In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, ground cinnamon, salt, and ground nutmeg until well combined.

  3. 3

    Mix Wet Ingredients

In another bowl, combine the vegetable oil, eggs, and vanilla extract. Beat well until fully mixed.

  4. 4

    Combine Mixtures

Gradually add the wet ingredients to the dry ingredients, stirring gently until just combined. Do not overmix.

  5. 5

    Add Carrots and Optional Ingredients

Fold in the grated carrots, and if using, add the chopped walnuts or pecans and raisins. Mix until evenly distributed.

  6. 6

    Pour into Pans

Divide the batter evenly between the prepared cake pans.

  7. 7

    Bake

Bake in the preheated oven for 30-35 minutes or until a toothpick inserted in the center comes out clean.

  8. 8

    Cool the Cakes

Once baked, remove the cakes from the oven and let them cool in the pans for 10 minutes. Then, transfer them to a wire rack to cool completely.

Frosting Preparation

  1. 9

    Prepare the Frosting

In a mixing bowl, beat the cream cheese and unsalted butter together until smooth and creamy.

  2. 10

    Add Sugar and Vanilla

Gradually add the powdered sugar, mixing until smooth, and then add the vanilla extract. Mix until combined.

  3. 11

    Frost the Cake

Once the cakes are completely cooled, place one layer on a serving plate, spread a layer of frosting on top, and then place the second layer on top. Frost the top and sides of the cake.

  4. 12

    Serve

Cut into slices and serve. Enjoy your delicious carrot cake!
