    Cutting the Potatoes

    Wash and peel the russet potatoes. Cut them into uniform sticks, about 1/4 inch thick.

    Soaking the Potatoes

    Place the cut fries in a bowl of cold water. Soak for at least 30 minutes to remove excess starch.

    First Fry

    Drain the potatoes and pat them dry with paper towels. Heat vegetable oil in a deep fryer or large pot to 325°F (163°C). Fry the potatoes in batches for about 3-4 minutes until they are soft but not browned. Remove and drain on paper towels.

    Cooling Period

    Let the fries cool for at least 30 minutes.

    Second Fry

    Increase the oil temperature to 375°F (190°C). Fry the cooled potatoes in batches for another 3-4 minutes until they are golden brown and crispy. Remove from the oil and drain on paper towels.

    Seasoning

    Immediately sprinkle the fries with salt while they are still hot. Serve hot.
