Prepare the Shallot-Herb Butter

In a small bowl, combine the softened unsalted butter, finely chopped shallots, chopped parsley, and chopped thyme. Mix well until all ingredients are evenly combined. Set aside.

Season the Filet Mignon

Pat the prime filet mignon pieces dry with paper towels. Season both sides generously with salt and black pepper.

Sear the Filets

In a large skillet, heat the olive oil over medium-high heat. Once the oil is hot, add the filet mignon pieces to the skillet. Sear for about 4-5 minutes on each side for medium-rare, or until your desired doneness is reached.

Rest the Meat

Once cooked to your liking, remove the filet mignon from the skillet and place them on a cutting board. Allow them to rest for 5 minutes.

Serve with Shallot-Herb Butter

After resting, place each filet mignon on a plate and top with a generous dollop of the shallot-herb butter. Serve immediately.
