Prepare the Salmon

Preheat your oven to 400°F (200°C). On a baking sheet lined with parchment paper, place the Faroe Island salmon fillets skin-side down. Drizzle olive oil over the fillets and season them with salt and black pepper.

Bake the Salmon

Place the seasoned salmon in the preheated oven and bake for 12-15 minutes, or until the salmon flakes easily with a fork and is opaque throughout.

Make the Meyer Lemon Butter Sauce

While the salmon is baking, prepare the sauce. In a saucepan over medium heat, melt the unsalted butter. Add minced garlic and sauté until fragrant, about 1-2 minutes.

Add Meyer Lemon Juice

Juice the Meyer lemons and add the juice to the saucepan. Stir in honey and chopped parsley, and let the mixture simmer for 3-4 minutes until slightly thickened.

Serve

Once the salmon is done baking, remove it from the oven. Plate the salmon and drizzle the Meyer lemon butter sauce over the top. Garnish with additional parsley if desired.
