    Prepare the Red Rice

    Cook the red rice according to package instructions. Set aside once cooked.

    Blacken the Tilapia

    Rub the tilapia fillets with olive oil, blackening seasoning, salt, and pepper. Heat a skillet over medium-high heat and cook the fillets for 4-5 minutes on each side until blackened and cooked through. Remove and keep warm.

    Blacken the Shrimp

    In the same skillet, add more olive oil if needed and toss in the shrimp. Season with blackening seasoning, salt, and pepper. Cook for 2-3 minutes until shrimp are pink and opaque. Remove from heat.

    Sauté the Vegetables

    In the same skillet, add mixed bell peppers and zucchini. Sauté for about 5 minutes until tender. Season with salt and pepper.

    Assemble the Dish

    On a plate, layer the cooked red rice, top with blackened tilapia, then add blackened shrimp. Sprinkle with pico de gallo, add sliced avocado, and finish with a sprinkle of Chihuahua cheese.
