    Prepare the Filling

    In a large skillet, brown the ground chuck over medium heat. Drain excess fat and set aside.

    Cook Vegetables

    In the same skillet, add diced onion, potato, carrot, and serrano pepper. Sauté until vegetables are tender, about 5-7 minutes.

    Combine Ingredients

    Add the browned ground chuck back to the skillet along with diced tomato and Mexican spice mix. Stir to combine and cook for an additional 5 minutes.

    Assemble Enchiladas

    Preheat the oven to 350°F (175°C). On each tortilla, place a generous amount of the filling, roll tightly, and place seam-side down in a baking dish.

    Add Sauce and Cheese

    Pour the red chile-tomatillo sauce over the enchiladas and sprinkle queso fresco on top.

    Cover with foil and bake for 20 minutes. Remove foil and bake for an additional 10 minutes, until cheese is melted and bubbly.
