Cook the Linguini
Bring a large pot of salted water to a boil. Add the linguini and cook according to package instructions until al dente. Drain and set aside.

Prepare the Sauce
In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant. Stir in the red chile tomatillo sauce and bring to a simmer.

Add Chicken or Shrimp
Add the smoked chicken or gulf shrimp to the skillet. Cook for 5-7 minutes until heated through and shrimp are cooked (if using). Season with salt and black pepper to taste.

Combine Pasta and Sauce
Toss the cooked linguini into the skillet with the sauce. Mix well to coat the pasta evenly with the sauce.

Serve
Plate the pasta and top with pico de gallo and crumbled queso fresco. Enjoy!
