In a large skillet, melt the butter over medium heat. Add the chopped onions and cook until translucent, about 3-4 minutes. Stir in the minced garlic and cook for an additional minute.

Add the diced tomatoes and chopped chiles to the skillet. Cook for about 5 minutes until the tomatoes start to soften.

Lower the heat and gradually add the Mexican cheese blend, stirring continuously until the cheese melts and becomes creamy.

If you are using chicken, beef, or shrimp, add your choice to the skillet and mix well to combine all ingredients. Cook for an additional 2-3 minutes until heated through.
