    Prepare the Shrimp

    In a large bowl, combine the shrimp, minced garlic, olive oil, chipotle chile, lime juice, salt, and black pepper. Toss to coat the shrimp evenly and let it marinate for about 15 minutes.

    Cook the Vegetables

    In a large skillet over medium heat, add a drizzle of olive oil. Add the mixed vegetables and sauté until tender, about 5-7 minutes. Season with salt and pepper to taste. Remove from skillet and set aside.

    Cook the Shrimp

    In the same skillet, add the marinated shrimp along with all the marinade. Cook over medium-high heat until the shrimp turn pink and opaque, about 3-5 minutes. Stir in the chopped cilantro just before removing from heat.

    Serve

    Serve the shrimp over a bed of red rice and top with the sautéed vegetables. Garnish with additional cilantro and lime wedges if desired.
