Prepare the Steak
Rub the filet mignon with Cajun seasoning on all sides. Heat a cast-iron skillet over high heat and add 1 tablespoon of olive oil. Once hot, sear the steak for 5-7 minutes on each side for medium-rare. Remove from heat and let rest.

Cook the Vegetables
In the same skillet, add the remaining tablespoon of olive oil. Add sliced bell peppers and onion. Sauté for about 4-5 minutes until tender and slightly charred.

Assemble the Fajitas
Slice the rested steak into strips. Serve with sautéed vegetables in warm flour tortillas. Optionally, add mashed potatoes on the side.
