    Prepare the Filling

    In a large skillet over medium heat, cook the ground chuck until browned. Drain excess fat.

    Add Vegetables

    Add diced potato, grated carrot, chopped onion, chopped tomato, and chopped serrano peppers to the skillet. Cook until the vegetables are tender, about 10 minutes.

    Season the Mixture

    Stir in the Mexican spices and cook for another 2-3 minutes, allowing the flavors to meld.

    Assemble the Enchiladas

    Preheat the oven to 350°F (175°C). Take a corn tortilla, fill it with the beef and vegetable mixture, and roll it up. Place seam-side down in a baking dish. Repeat with remaining tortillas.

    Top with Sauce and Cheese

    Pour the red chile tomatillo sauce over the enchiladas and sprinkle crumbled queso fresco on top.

    Cover the dish with foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, until the cheese is melted and bubbly.
