    Preheat and prepare

    Preheat the oven to 220°C (425°F). If using an air fryer, preheat to 200°C (400°F). Line two baking sheets with parchment paper or use a single wire rack over a sheet for extra air circulation.

    Wash and slice

    Wash and dry the sweet potatoes thoroughly. Using a waffle-cut (crinkle) slicer or mandoline with a waffle blade, cut the sweet potatoes into waffle fries: slice across, rotate 90 degrees, and slice again to create the lattice/waffle pattern. Aim for pieces about 3–4 mm thick so they crisp without burning.

    Toss with cornstarch and oil

    Place the cut sweet potato waffle fries in a large bowl. Sprinkle the cornstarch over the pieces and toss gently to coat each piece; the cornstarch helps create a crisp exterior. Drizzle 2 tablespoons olive oil over the fries and toss again to evenly distribute. If pieces stick together, separate them so they lie single-layer on the baking sheet.

    Season

    In a small bowl combine garlic powder, paprika, smoked paprika, black pepper, and kosher salt. Sprinkle the spice mix over the oiled fries and toss gently to coat evenly.

    Arrange for baking

    Spread the waffle fries in a single layer on the prepared baking sheets, leaving small gaps between pieces to allow hot air to circulate. If needed, use two sheets and rotate their positions halfway through baking for even color.

    Oil finish (optional)

    Lightly brush or spray the fries with the neutral oil (about 1 tablespoon total) to encourage browning and crisping.

    Bake or air-fry

    Bake in the preheated oven for 18–25 minutes, flipping each piece once at about 10–12 minutes, until edges are golden brown and crisp. For an air fryer, cook in a single layer at 200°C (400°F) for 12–16 minutes, shaking the basket halfway through. Watch closely near the end to avoid burning.

    Finish and rest

    When fries are crisp and golden, remove them from the oven/air fryer and immediately taste for salt; sprinkle a pinch more kosher salt if needed. Let them rest 2–3 minutes on the rack so they firm up before serving.

    In a small bowl combine 1/2 cup Greek yogurt (or sour cream), 1 teaspoon maple syrup, 1 teaspoon hot sauce, and 1 teaspoon fresh lime juice. Stir until smooth. Taste and adjust heat or sweetness as desired. Garnish with 1 tablespoon chopped parsley or cilantro.
