Oatmeal Base

In a medium saucepan combine 1 cup rolled oats, 1 1/4 cups full-fat canned coconut milk, 1/2 cup water and 1/4 tsp fine sea salt. Stir to combine.

Place the saucepan over medium heat and bring the mixture to a gentle simmer, stirring frequently to prevent sticking (about 4–5 minutes).

Once simmering, reduce heat to low and continue to cook, stirring every 30 seconds, until the oats are tender and the porridge is creamy — about 4–6 minutes more depending on desired thickness.
Sweetening & Flavoring

Remove the pot from the heat when the oats are cooked to your liking. Stir in 1 tsp pure vanilla extract and 1 tablespoon maple syrup (or honey) until fully incorporated. Taste and adjust sweetness if desired.
Finishes & Assembly

Spoon the oatmeal into a serving bowl. If you prefer a looser consistency, stir in up to 2 tablespoons additional coconut milk.

Top the oatmeal with 2 tablespoons toasted shredded coconut, 2 tablespoons chopped toasted almonds (or walnuts) and 1/2 cup fresh berries or sliced banana.

Optional finishing touch
Sprinkle a small pinch of flaky sea salt over the top to enhance flavor, then drizzle a little extra maple syrup if you like it sweeter. Serve warm.
