Catfish

    Marinate the Catfish

    In a shallow dish, pour the buttermilk and soak the catfish fillets in it for about 30 minutes to an hour.

    Prepare the Breading

    In a separate bowl, combine the cornmeal, flour, paprika, garlic powder, onion powder, salt, and black pepper. Mix well.

    Bread the Catfish

    After marinating, remove the catfish from the buttermilk, allowing excess to drip off. Dredge each fillet in the cornmeal mixture, ensuring they are fully coated.

    Heat Oil

    In a large skillet or deep fryer, heat the oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Catfish

    Carefully place the breaded catfish fillets in the hot oil. Fry for about 3-4 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.

    Prepare the Potatoes

    Peel the potatoes and cut them into thin strips to make fries.

    Heat Oil for Frying

    In a separate pot, heat the oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Potatoes

    Add the potato strips to the hot oil in batches. Fry until golden and crispy, about 4-6 minutes. Remove and drain on paper towels, then season with salt to taste.

Remoulade Sauce

    Combine Ingredients

    In a bowl, mix together the mayonnaise, Dijon mustard, chopped capers, pickle relish, lemon juice, and hot sauce. Adjust seasoning to taste.

    Chill

    Refrigerate the remoulade sauce for at least 30 minutes to allow the flavors to meld.
