Preparation of Roux

    Make the Roux

    In a large heavy-bottomed pot, heat the vegetable oil over medium heat. Gradually whisk in the all-purpose flour, stirring constantly until the mixture turns a deep brown color (about 20-30 minutes). Be careful not to burn it.

Cooking the Gumbo

    Sauté Vegetables

    Add the diced onion, bell pepper, and celery to the roux. Cook for about 5 minutes until the vegetables are softened. Stir in the minced garlic and cook for an additional minute.

    Add Liquids

    Pour in the chicken broth and add the diced tomatoes, Worcestershire sauce, and bay leaves. Stir to combine and bring to a boil.

    Add Sausage and Spices

    Add the sliced Andouille sausage, Cajun seasoning, salt, black pepper, and red pepper flakes to the pot. Reduce heat to low and let simmer for 30 minutes, stirring occasionally.

    Incorporate Seafood

    After 30 minutes, add the shrimp, crab meat, and crawfish tails to the pot. Stir gently to combine. Add the sliced okra and continue to simmer for another 10-15 minutes until the seafood is cooked through.

Serving

    Serve the Gumbo

    Remove bay leaves from the gumbo. Serve hot over cooked rice and garnish with chopped green onions as desired.
