Preparation

    Prepare the Fillings

    Chop the bell peppers, onion, and tomatoes. Slice the mushrooms and wash the spinach. Set all fillings aside.

    Beat the Eggs

    In a medium bowl, crack the three eggs. Add salt and black pepper. Whisk the mixture until the yolks and whites are fully combined.

Cooking

    Heat the Pan

    Place a non-stick skillet over medium heat and add the butter or oil. Allow it to melt and coat the pan.

    Cook the Eggs

    Pour the beaten egg mixture into the skillet. Let it cook undisturbed for about 1-2 minutes, until the edges start to set.

    Add Fillings

    Once the edges of the omelette are set, sprinkle your choice of fillings (bell peppers, onion, mushrooms, cheese, spinach, and tomatoes) evenly over one half of the omelette.

    Fold and Finish Cooking

    Using a spatula, carefully fold the other half of the omelette over the fillings. Allow it to cook for another 1-2 minutes until the cheese melts and the inside is cooked to your liking.

    Serve

    Slide the omelette onto a plate and serve hot. Optionally, garnish with additional herbs or seasoning if desired.
