Method

Preparation

  1. 1

    Prepare the Marinade

In a mixing bowl, combine brown sugar, paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper. Mix well to create a dry rub.

  2. 2

    Marinate the Meats

Rub the dry marinade evenly over the beef brisket, pork ribs, and chicken thighs. Place them in a large zip-top bag or shallow dish and refrigerate for at least 4 hours, preferably overnight.

  3. 3

    Prepare the BBQ Sauce

In a saucepan over medium heat, combine ketchup, apple cider vinegar, brown sugar, Worcestershire sauce, smoked paprika, garlic powder, salt, and black pepper. Stir well and let it simmer for about 15 minutes until slightly thickened.

Grilling

  1. 4

    Preheat the Grill

Preheat your grill to medium heat (about 300°F or 150°C).

  2. 5

    Cook the Beef Brisket

Place the beef brisket on the grill, fat side up. Cook for about 1.5 to 2 hours, brushing with BBQ sauce every 30 minutes.

  3. 6

    Cook the Pork Ribs

Add the pork ribs to the grill. Cook for about 1.5 to 2 hours, turning every 30 minutes and applying BBQ sauce.

  4. 7

    Cook the Chicken Thighs

Place the chicken thighs on the grill and cook for about 30-40 minutes, turning occasionally and brushing with BBQ sauce.

Serving

  1. 8

    Rest and Serve

Once cooked, remove the meats from the grill and let them rest for 10 minutes before slicing. Serve with coleslaw and cornbread on the side, if desired.
