Method
Fritters Preparation
- 1
Mix the Dry Ingredients
In a large mixing bowl, combine the all-purpose flour, cornmeal, baking powder, salt, and black pepper. Whisk together until evenly mixed.
- 2
Combine the Wet Ingredients
In a separate bowl, beat the eggs and then add the milk, mixing well. Add the sweet corn kernels and chopped green onions to the wet mixture.
- 3
Combine Wet and Dry Mixtures
Pour the wet mixture into the dry ingredients and stir gently until just combined. Do not overmix; it's okay if there are a few lumps.
- 4
Heat the Oil
In a large frying pan or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small amount of batter into it; if it sizzles, the oil is ready.
- 5
Fry the Fritters
Using a spoon or ice cream scoop, drop tablespoons of the batter into the hot oil, being careful not to overcrowd the pan. Fry for about 3-4 minutes on each side or until golden brown and crispy.
- 6
Drain and Serve
Once cooked, remove the fritters with a slotted spoon and place them on a plate lined with paper towels to drain excess oil. Serve warm.
Ranch Dressing Preparation
- 7
Combine Ingredients
In a medium bowl, whisk together the mayonnaise, sour cream, buttermilk, dried dill, garlic powder, onion powder, salt, and black pepper until smooth.
- 8
Chill the Dressing
Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.
