Preparing the Calamari

Soak the Calamari
Place the calamari rings in a bowl and cover them with buttermilk. Let them soak for at least 30 minutes to tenderize the meat.

Prepare the Breading
In a large bowl, mix together the all-purpose flour, cornstarch, salt, black pepper, and paprika. This will be your breading mixture.

Heat the Oil
In a large, heavy-bottomed pot, heat vegetable oil over medium-high heat until it reaches 350°F (175°C). You can check the temperature with a thermometer.

Coat the Calamari
Remove the calamari from the buttermilk and allow any excess to drip off. Dredge the calamari rings in the prepared breading mixture, ensuring they are evenly coated.

Fry the Calamari
Carefully place the coated calamari rings into the hot oil in batches. Fry for about 2-3 minutes or until they are golden brown and crispy. Remove them with a slotted spoon and drain on paper towels.
Making the Spicy Aioli

Combine Ingredients
In a small bowl, mix together the mayonnaise, minced garlic, sriracha sauce, lemon juice, salt, and black pepper until well combined.

Chill the Aioli
Cover the aioli with plastic wrap and refrigerate for at least 15 minutes to let the flavors meld together.
Serving

Plate the Dish
Serve the crispy calamari hot with the spicy aioli on the side for dipping.
