Method

Cooking the Pasta

    Boil the Pasta

    In a large pot, bring water to a boil. Add a pinch of salt and the penne pasta. Cook according to package instructions until al dente, then drain and set aside.

Preparing the Blackened Chicken

    Season the Chicken

    Rub the chicken breasts with Cajun seasoning evenly on both sides.

    Cook the Chicken

    Heat olive oil in a skillet over medium-high heat. Add the seasoned chicken and cook for about 6-7 minutes on each side, or until cooked through and blackened. Remove from skillet, let rest for a few minutes, and slice into strips.

Making the Cajun Cream Sauce

    Sauté Garlic

    In the same skillet used for the chicken, add minced garlic and sauté for about 1 minute until fragrant.

    Add Cream and Broth

    Pour in the heavy cream and chicken broth. Stir to combine and bring the mixture to a simmer.

    Season Sauce

    Add salt, black pepper, and Parmesan cheese into the sauce. Stir continuously until the cheese has melted and the sauce thickens.

Combining Ingredients

    Mix Everything Together

    Add the cooked penne pasta, sliced blackened chicken, cherry tomatoes, and fresh spinach into the skillet with the sauce. Toss until everything is well coated and heated through.

    Plate the Cajun Chicken Pasta and garnish with additional Parmesan cheese if desired. Enjoy!
