Preheat the Oven
Preheat your oven to 450°F (232°C).

Mix Dry Ingredients
In a large bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt until well combined.

Cut in Butter
Add the cold unsalted butter to the dry ingredients. Using a pastry cutter or your fingers, work the butter into the flour mixture until it resembles coarse crumbs.

Add Buttermilk
Make a well in the center of the mixture and pour in the buttermilk. Stir gently until just combined. Avoid overmixing.

Shape the Biscuits
Turn the dough out onto a floured surface and gently pat it into a 1-inch thick slab. Use a biscuit cutter to cut out biscuits.

Bake the Biscuits
Place the biscuits on a baking sheet and bake in the preheated oven for 12-15 minutes, or until golden brown.
Gravy

Cook the Sausage
In a large skillet over medium heat, add the ground sausage. Cook until browned and crumbled, about 5-7 minutes.

Make a Roux
Sprinkle the flour over the cooked sausage and stir to combine. Cook for 1-2 minutes to remove the raw flour taste.

Add Milk
Slowly pour in the milk while stirring continuously to prevent lumps. Continue to cook until the gravy thickens, about 5 minutes.

Add black pepper and salt to taste. Stir well to combine and adjust seasoning as needed.
