Instructions

  1. 1

    Sauté the Vegetables

In a large pot, heat the olive oil over medium heat. Add the diced onion and cook until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.

  2. 2

    Add Carrots and Celery

Add the chopped carrots and celery to the pot. Sauté the mixture for about 5-7 minutes, until the vegetables are softened.

  3. 3

    Incorporate Tomatoes

Pour in the canned whole tomatoes (with their juice) and break them apart with a spoon. Stir well to combine with the vegetables.

  4. 4

    Add Broth and Seasoning

Add the vegetable broth, fresh basil leaves, salt, black pepper, and sugar to the pot. Stir everything together and bring to a boil.

  5. 5

    Simmer the Soup

Once boiling, reduce the heat to low and let the soup simmer for 20-25 minutes, allowing the flavors to meld together.

  6. 6

    Blend the Soup

Using an immersion blender, puree the soup until smooth. Alternatively, you can transfer the soup in batches to a blender and blend until smooth. Return to the pot.

  7. 7

    Add Heavy Cream

Stir in the heavy cream and heat the soup on low until warmed through, about 5 minutes. Adjust seasoning to taste.

  8. 8

    Serve

Ladle the bisque into bowls, garnishing with additional fresh basil leaves if desired. Enjoy your Tomato Basil Bisque!
