    Prepare the Grapes

    Harvest the Chardonnay grapes and remove any stems or leaves. Rinse them gently under cool water.

    Crush the Grapes

    Using a wine press or your hands, crush the grapes to extract the juice and transfer it into a fermentation vessel.

    Add Water

    Pour the measured water into the fermentation vessel containing the grape juice. Stir gently to combine.

    Add Yeast

    Sprinkle the wine yeast evenly over the surface of the juice mixture. Allow it to hydrate for about 15 minutes, then stir gently to incorporate.

    Add Sugar

    Dissolve the sugar in a small amount of warm water and add it to the fermentation vessel. Stir well to ensure it is fully dissolved.

    Add Sulfites

    Dissolve the potassium metabisulfite in a small amount of water and add it to the mixture to prevent unwanted bacteria and oxidation.

    Fermentation

    Cover the fermentation vessel with a clean cloth and allow it to ferment at a controlled temperature (around 18-22°C) for about 1-2 weeks, or until fermentation activity ceases.

    Racking

    Once fermentation is complete, siphon the wine off the sediment into a clean container. Avoid disturbing the sediment at the bottom.

    Aging

    Transfer the racked wine into an oak barrel or glass carboy for aging. Allow it to age for at least 3 months for the best flavor development.

    Bottling

    Once aged, siphon the wine into sterilized bottles, leaving some headspace. Cork the bottles tightly and store them in a cool, dark place.
