Prepare the Calamari
Rinse the calamari rings under cold water and pat them dry with paper towels.

Make the Coating
In a mixing bowl, combine the all-purpose flour, cornstarch, salt, black pepper, and cayenne pepper. Mix well.

Dredge the Calamari
Dip each calamari ring into the egg mixture, allowing any excess to drip off, then coat it in the flour mixture. Ensure they are well coated.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Calamari
Carefully add the coated calamari rings to the hot oil in batches. Fry for about 2-3 minutes or until golden brown. Remove and drain on paper towels.

Serve the fried calamari warm with a side of spicy tomato sauce.
