Pork Green Chili

Preparation and Cooking

    Prepare the Pork

    In a large pot, heat olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Add minced garlic and cook for an additional minute.

    Brown the Pork

    Add the pork shoulder to the pot and brown on all sides. This should take about 5-7 minutes.

    Add Ingredients

    Stir in the roasted green chilies, chicken broth, cumin, oregano, salt, and pepper. Bring to a simmer.

    Cook the Chili

    Reduce the heat to low, cover, and let it simmer for about 2 hours, or until the pork is tender and easily shredded.

    Shred the Pork

    Remove the pork from the pot and shred it using two forks. Return the shredded pork to the pot and stir well.

    Prepare the Cilantro Sour Cream

    In a small bowl, mix the sour cream with chopped cilantro and set aside.

    Serve

    Ladle the green chili into bowls, top with shredded aged cheddar and a drizzle of cilantro sour cream. Serve with warm corn tortillas on the side.
