Pancake Preparation

    Prepare the Pancake Batter

    In a large mixing bowl, whisk together the all-purpose flour, baking powder, sugar, and salt. In another bowl, beat the eggs and then add the milk and melted butter. Combine the wet ingredients with the dry ingredients until just mixed; do not overmix.

    Cook the Pancakes

    Heat a non-stick skillet or griddle over medium heat. Pour 1/4 cup of the batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook for another 1-2 minutes until golden brown. Keep pancakes warm in a low oven while you cook the rest.

    Prepare the Berry Coulis

    In a small saucepan, combine mixed seasonal berries (such as strawberries, blueberries, and raspberries) with a tablespoon of sugar and a splash of water. Cook over medium heat until the berries break down and the mixture is syrupy, about 5-7 minutes. Blend until smooth and strain if desired.

    Stack the pancakes on a plate, drizzle with berry coulis, add a dollop of whipped cream, and serve with maple syrup on the side.
